Pork Chop & Potato Bake

This is one of my simple ‘quick fillers’ for unannounced guests. Not very exotic, but heroically simple and very tasty. This is a kind of rough & ready meat gratin and you can add anything you want like a spoon of ginger to give it a little sparkle. Shredded Onions or Leeks can be added. You have your basic meat & potatoes but you can turn it into a gourmet dish with extra stock in the soup & milk mix or add chilli peppers and put a nice crust of Parmesan on top with cracked pepper

PORK CHOP & POTATO BAKE

6 lean pork chops

6 potatoes, sliced thinly

1 can cream of mushroom soup

½ pint Milk

1 dessert spoon of Dijon Mustard

Sea Salt & Cracked Pepper to taste

Method:

Mix ingredients and soup with milk together.

Brown pork chops in oven.

Put potatoes on top of pork chops. Pour soup over top.

Bake 1 hour at 400 degrees.

Side Option:

Serve with Poached eggs and sliced fried tomatoes & freshly cooked spinach with chopped garlic & Sliced French onion
